Our extra virgin olive oils are from the highest quality and most expensive olive oil classification. They are produced entirely by mechanical means without the use of any solvents, and under temperatures that will not degrade the oil. Our EVOO producer uses fresh olives in good condition and monitors every step of the process with great care. Extra virgin olive oil doesn't stay that way: Even in perfect storage conditions, the oil will degrade over time, so it's important to enjoy it within its one to two year shelf life.
Virgin means the oil was made by simply pressing olives. It didn't undergo any of the industrial processes used to make 'refined' oils such as canola, sunflower, soybean and the lower grades of olive oil labeled 'Pure,' 'Light,' and simply 'Olive Oil.' Virgin olive oils that have no taste defects and pass strict tests in terms of chemistry can be labeled 'Extra Virgin.'
Just like different grape varieties used for wines, there are more than 1,000 olive varieties, each with its own unique taste characteristics. Our infused olive oils are a blend of varieties with a light fruity flavor and not over powering like some of the stronger oils oils can be. We want to highlight our talents of infusing flavors without the olive oil overpowering our visions or flavor excellence. We are constantly exploring the almost limitless possibilities of pairing olive oils with our infusion options to enhance our culinary creations for you to enjoy.
Choosing an olive oil to bring out the best flavors in dishes can be a challenge. We are often asked "Which One Is Best", and the truthful answer is "All Of Them". The way an individual responds to taste is unique and very personal. Everyone's palate and perception of flavor is like no other, so there is no "Perfect" answer except the one you make for yourself. That is why we sample at every direct marketing type event we do. Taste them all yourself and choose what fits your personal flavor profile, not ours.
